Course Syllabus

All courses at Brentwood Open Learning College take place online, with no fixed study schedules and no deadlines imposed.  Each of the nine self-paced units concludes with an assessment, which you will submit to your assigned tutor for moderation.  Topics covered include:

Unit 1 - Introduction to Food Safety

The first unit provides a broad overview of the most important principles of food safety, while outlining the risks associated with poor food safety standards. Unit One also questions who takes responsibility for the safety of food handling practices, along with how food safety standards and policies vary internationally.

Unit 2 - What is Food Hygiene

Unit Two takes a look of the relationship between food hygiene and food poisoning risk, examining common causes of food poisoning and a breakdown of the ‘food poisoning chain’. Key steps that can and should be taken to minimise food poisoning risk are presented and discussed, along with how contamination risk is related to personal hygiene.

Unit 3 - The 4Cs of Food Hygiene

The ‘4Cs’ of effective food hygiene are discussed in Unit Three, which encompasses the safe and effective cooking, clean and chilling of food, combined with avoidance of cross-contamination.  Candidates are presented with several guideline cooking temperatures to ensure food is safe for consumption, plus minimum temperature holding times.

Unit 4 – Microbiology

Microbiology from a food safety perspective follows in Unit Four, taking a look at several different types of microorganisms and how they affect food safety.  The extent to which proactive food safety can prevent the growth of bacteria and pathogens is discussed, along with the harmful effects spoiled food can have on a person’s health.

Unit 5 - Food Poisoning

A more detailed look at food poisoning follows in the fifth unit, examining the most common types of food poisoning and the main differences between bacterial and chemical food poisoning.  The most common causes of food poisoning are also discussed, along with steps that must be taken to reduce or eliminate food poisoning risk where possible.

Unit 6 - Pest Control

Common workplace pests and issues with infestation are discussed in Unit Six.  Identifying the signs of specific types of infestation is brought into discussion, including  the health risks posed by different types of pests and how to prevent infestation from occurring in the first place.

Unit 7 - Food Handling & Food Storage

Unit Seven provides a more detailed overview of safe cooking temperatures and holding times for a variety of food types.  Candidates also consider the importance of correct chilling temperatures, along with how foods classified as ‘potentially hazardous’ have special preparation and storage requirements.

Unit 8 - Packaging and Labelling

Unit Eight offers an overview of the key information that must be presented on the packaging of a food product.  Candidates learn how to write a clear and effective nutritional declaration, present appropriate information on allergens and ensure food labels comply with all applicable regulations.

Unit 9 - Transporting Food Safely

The course closes by examining the principles of safe food transportation, focusing on the importance of ensuring safe holding temperatures and preventing cross-contamination while in transit.  Considerations specific to individual methods of transportation for food-based consignments are also presented and discussed.
