This is an entry-level Food Safety and Hygiene Award with three units, concluding with online assessments for submission to your assigned tutor. Each self-paced unit covers an essential topic or knowledge area, as outlined below:

Unit 1 - Introduction to Food Safety

Unit One presents learners with a brief history of food safety standards, while exploring what ‘food safety’ really means in a practical setting. Several key principles for effective food safety are outlined and discussed, including who takes responsibility for ensuring food productsreach the consumer in safe condition for consumption.

Unit 2 - What is Food Hygiene

Unit Two examines the relationship between hygiene and food safety, with a look at how personal hygiene holds the key to a safe and responsible working environment.  Several potential contamination risks food products may be exposed to are also discussed, along with the threat posed by food poisoning and how it can be prevented.

Unit 3 - The 4Cs of Food Hygiene

Unit Three examines the ‘4Cs’ food hygiene methodology, which focuses on cleaning, cooking, chilling and cross-contamination prevention to ensure food products are safe for consumption.  Candidates are also familiarised with several essential cooking times and temperatures that apply to different types of food products.
