Unit 2 - What is Food Hygiene

The second unit turns attention to hygiene, examining the correlation between a hygienic workplace environment and good food safety standards.  Personal hygiene in the context of food safety is also discussed, alongside the basics of food poisoning and the steps that must be taken to minimise the risk of foodborne illness.

Unit 3 - The 4Cs of Food Hygiene

Unit Three provides an overview of the ‘4Cs’ of food hygiene, discussing how each plays an equally important role in ensuring adequate food safety standards. Learners examine the functions and objectives ofcleaning, cooking, chilling and cross-contamination prevention activities, alongside several sample cooking temperatures for safe consumption.
