Unit 1 - Introduction to Food Safety

The fundamental principles of food safety are detailed and discussed in the first unit, which outlines the potential consequences of inadequate food safety standards.  Candidates consider who takes responsibility for food safety within a business, while considering key events that have taken place during the recent history of food safety.

Unit 2 - What is Food Hygiene

The second unit turns attention to hygiene, examining the correlation between a hygienic workplace environment and good food safety standards.  Personal hygiene in the context of food safety is also discussed, alongside the basics of food poisoning and the steps that must be taken to minimise the risk of foodborne illness.

Unit 3 - The 4Cs of Food Hygiene

Unit Three provides an overview of the ‘4Cs’ of food hygiene, discussing how each plays an equally important role in ensuring adequate food safety standards. Learners examine the functions and objectives ofcleaning, cooking, chilling and cross-contamination prevention activities, alongside several sample cooking temperatures for safe consumption.

Unit 4 - Food Handling & Food Storage

Additional cooking times and temperatures are presented and discussed in Unit Four, which also highlights the importance of holding foods at specific temperatures to ensure they are safe for consumption. Guidelines for working with foods within the ‘potentially hazardous’ classification are also provided.

Unit 5 - Packaging and Labelling

Unit Five looks at the legal requirement for manufacturers to provide clear and accurate information on the content and composition of food products.  Candidates also consider the importance of clear information on potential allergens, along with how to ensure product packaging features a nutritional declaration.

Unit 6 - Transporting Food Safely

In the final unit, learners are presented with a series of considerations for safe and hygienic food transportation.  Challenges associated with transporting food safely are presented and discussed, including the elevated risk of cross contamination and ensuring food products are held at appropriate temperatures during transit.
